Banana Oatmeal Chia Pancakes
My favorite meal of the day has always been BREAKFAST because itβs the first meal after waking up (hence the name, you break the fast)! Nothing yells weekend to me more than PANCAKES.π₯ This has always been a special childhood favorite for me as my mother would always make them on the weekends. There is something so fun about making the batter from scratch, forming small circles on the skillet, flipping them, and enjoying them with syrup and any other toppings of choice. β

On weekends, I like to take my time making breakfast or brunch, sipping on my coffee and savoring every bite. I decided to create a comforting, healthy and delicious pancake recipe and I am beyond excited to share it with you!! I fell in love with these instantly because they honestly taste like mini #bananabread cakes (quarantine trend). π€©β
Ingredients
(Makes ~6 pancakes)β
Serving size: 2-3 β
β«οΈ1 large ripe banana, mashed β
β«οΈ2 large eggsβ
β«οΈ1/3 c unsweetened plant-based milk
β«οΈ3/4 c oat flour β
β«οΈ1/4 c rolled oats
β«οΈ1 tbsp chia seeds (ground)β
β«οΈ1 tsp of baking soda β
β«οΈdash of cinnamon β

Directions
1. Mash banana in a medium bowlβ
2. Add eggs, milk and mix togetherβ
3. Add dry ingredients: oat flour, oats, chia seeds, baking soda, and cinnamon and mix all togetherβ
4. Spray nonstick spray on a medium skillet and make three pancakes at a time (about 1/4 c. each). Leave about 3 minutes per side before flipping. β
5. Before the next batch, wipe pan clean, spray more non-stick cooking oil and cook the remaining three pancakesβ
6. Serve with pure maple syrup, your favorite berries, and some crushed walnuts. Enjoy!β
